Mini Pizzas with Bresse Bleu and Walnuts Recipe

Chef's Note
To make first course pizzas rather than hors d'oeuvre, make the dough circles about 8-10 cm (4-5") in diameter and add more topping.
Once you take them out of the oven, garnish the mini pizzas with whole chives or arugula and serve immediately as an appetizer or a gourmet snack.
Ingredients
For 4 servings
- 1 Bresse Bleu cheese (250 g / 9 oz.) or other soft blue cheese
- 250 g (9 oz.) pizza dough
- 80 g (3 oz.) walnut halves
- Freshly ground pepper
Method
- Preheat the oven to 240° C (475° F).
- Divide the dough into 16 equal portions; flatten them between the palms of your hands and form them into small pizza shapes. Each one should be about 5 cm (2") in diameter. Place on a parchment-lined baking sheet.
- Place a few thin slices of cheese on top of the dough discs and top with walnuts. End with a grinding of black pepper.
- Bake for about 6 minutes, until the mini pizzas are nicely golden.
