Blueberry Fritters Recipe

Chef's Note
This recipe comes to us from the Odawa tribe of the Wilwimikong Indian Reserve on Ontario's Manitoulin Island.
These fritters are served with mint tea or a bark infusion.
Ingredients
- 1.25 liter (5 cups) all-purpose flour
- 400 ml (1 1/2 cups) blueberries (Bilberry or Blueberry)
- 4 tbsp. baking powder
- 6 eggs, beaten
- Corn, sunflower or other vegetable oil for frying
Method
- combine the dry ingredients in a bowl;
- press the blueberries lightly to obtain about 125 ml (1/2 cup) juice; beat the eggs with the juice until creamy;
- blend the egg-juice mixture and blueberries into the dry ingredients;
- drop balls of the batter into hot oil and fry until golden brown; drain and serve hot.
