Braised Snow Peas with Corn and Tomatoes (Tsie Txie hedoe)

Ingredients for 4 servings
- 225 g (8 oz.) String Beans
- 3 tomatoes, peeled
- 125 g (4 oz.) kernel corn
- 4 tbsp. peanut oil
- 3 green onions
- 1 tbsp. light soy sauce
- 1 tbsp. sugar
- 1 tbsp. hoisin sauce
- 6 tbsp. chicken broth
- 1 tbsp. sesame oil
- Chives
- 1/2 tbsp. grated fresh ginger
  1. trim the ends from the snow peas;
  2. cut each tomato into 8 wedges; squeeze to remove the juice and seeds;
  3. heat the oil in a wok; sauté the garlic, sliced green onions and ginger for 30 seconds;
  4. add the snow peas and stir fry over high heat for 2 minutes;
  5. add the corn, soy sauce, hoisin sauce, sesame oil, salt and sugar and mix well;
  6. add the broth; reduce the heat and simmer for 4 minutes or until the liquid has almost completely evaporated;
  7. add the tomatoes gently to the wok just long enough to heat them through;
  8. transfer to a platter; sprinkle with chopped chives and serve hot.
