Braised Veal Heart with Carrots and Oranges Recipe

Ingredients
Ingredients for 4 servings
- 1 veal Heart
- 2 onions
- 400 g (14 oz.) Carrots
- 1/2 glass white wine
- 2 unsprayed Oranges
- 50 g (3 tbsp.) butter
- Salt and pepper
- 2 tbsp. chopped cilantro
Method
- Peel the carrots and cut into sticks. Peel the onions and cut into 8 wedges. Squeeze one orange and cut the second into small sections.
- Heat a cocotte or Dutch oven with the butter and brown the onions and heart on all sides.
- When nicely browned, add the carrots, white wine, orange juice and orange sections. Season with salt and pepper, cover and cook for 2 hours over low heat.
- Transfer to a platter, slice the heart and serve sprinkled with chopped cilantro.
