Braised Veal Heart with Carrots and Oranges

Ingredients
Ingredients for 4 servings
- 1 veal Heart
- 2 onions
- 400 g (14 oz.) Carrots
- 1/2 glass white wine
- 2 unsprayed Oranges
- 50 g (3 tbsp.) butter
- Salt and pepper
- 2 tbsp. chopped cilantro
Method
  1. Peel the carrots and cut into sticks. Peel the onions and cut into 8 wedges. Squeeze one orange and cut the second into small sections.
  2. Heat a cocotte or Dutch oven with the butter and brown the onions and heart on all sides.
  3. When nicely browned, add the carrots, white wine, orange juice and orange sections. Season with salt and pepper, cover and cook for 2 hours over low heat.
  4. Transfer to a platter, slice the heart and serve sprinkled with chopped cilantro.
