Brighton Soup Recipe

Ingredients
For 4 servings
- 1.5 liters (6 cups) chicken stock
- 6-8 large carrots
- 125 g (4 oz.) cheddar
- 125 g (4 oz.) bacon, in small pieces
- 2 good-sized potatoes
- 500 ml (2 cups) milk
- A knob of butter
- Pepper
- A little cream
Method
- cook the carrots and potatoes in chicken broth; drain, reserving the broth;
- sauté the bacon bits in a skillet;
- liquefy the carrots, potatoes and bacon in a blender with 500 ml (2 cups) milk;
- return to the pot with the broth;
- season with pepper; add the cheddar and let melt slowly; whisk well;
- serve with a dollop of butter and a drizzle of cream.
