Chef's Note

In the winter, in cold northern regions, it’s comforting to have a drink specially made to heat up the body and strengthen its immunity.

Here’s a wonderful recipe of Indian origin that’s perfect for warding off chills and warming your heart, while being a great line of defense against viral and bacterial assaults.

For 4 servings / 1 litre / 4 cups

- 625 ml milk
- 425 ml water
- 3 ml black tea
- 8 ml sugar
- 2 green cardamom pod
  1. Crush the cardamom coarsely.
  2. In a saucepan, heat the water and add the tea and cardamom. Boil for 2 minutes.
  3. Add the milk and simmer over medium heat for 3 minutes. Add the sugar, stir and infuse 2 minutes longer.

It’s preferable to strain the chai before serving.
