Chicken Breasts with Bresse Blue Cheese Recipe

Now, here's THE recipe to get your children to eat blue cheese. When they see these chicken "sandwiches", they'll bite into them right away. But that's no reason to eat them with your fingers...
Ingredients
For 4 servings
- 250 g (9 oz.) Bresse blue cheese
- 4 small free-range chicken breasts
- 4 thin slices of bacon
- 2 small tomatoes
- 1 tbsp. sunflower oil
- 2 sprigs of flat leaf parsley
- salt and pepper
Method
- Season the chicken breasts with salt and pepper. Sauté them in a skillet in the sunflower oil for 7-8 minutes over medium heat, turning occasionally. Remove from the heat and cool to lukewarm.
- Preheat the oven to 200° C (400° F). With a sharp knife, butterfly the breasts (cutting them horizontally to open up like a book, without cutting all the way through).
- Slice the cheese and tomatoes and stuff the chicken breasts.
- Wrap each stuffed chicken breast with a slice of bacon, sticking the ends together.
- Place the chicken breasts in a baking dish and bake in the oven for 8 minutes.
- Serve immediately, with a potato gratin, if desired.
