Fiesta Chicken Wings

- 1 kg (2 1/4 lb.) Chicken wings
- Salt and pepper

- 250 ml (1 cup) ketchup
- 125 ml (1/2 cup) chicken stock
- 2 shallots
- 1 clove of garlic
- A piece of fresh ginger
- 3 tbsp. vinegar
- 3 tbsp. soy sauce
- 3 tbsp. brown sugar or honey
- 1/2 tsp. cayenne or Tabasco
  1. Combine all the ingredients for the marinade;
  2. marinate the chicken wings for a few hours in the refrigerator; remove them and scrape off the excess sauce;
  3. grill the wings on the barbecue for a few minutes on each side, brushing more sauce over the wings if necessary;
  4. heat the remaining marinade at a simmer for several minutes; serve on the side.
