Chef's Note

A very light dish with the flavors of Asia

Ingredients
Pour 2 personnes

- 2 chicken breasts
- 2 Tsp. curry
- 100 g vermicelli or Asian noodles
- 1/3 cucumber
- 1 small red onion
- 2 twigs of mint
- 10 twigs of cilantro
- salad leaves (romaine, sucrine, iceberg)
- 1 Tbsp. salted peanuts

Sauce
- 1 Tbsp. sesame oïl or sunflower oil
- 1 Tbsp. fish sauce (nuoc mâm)
- 2 Tbsp. soy sauce
- 2 Tsp. lemon juice
- 1 Tsp. sugar
Method
  1. Sauté the chicken breasts in a skillet in 2 Tbsp. neutralflavored oil. When they are seared, sprinkle each side with curry powder. Continue cooking, covered, over low heat with 2 Tbsp. water. Let rest and then slice thickly.
  2. Meanwhile, cook the vermicelli in boiling salted water; drain.
  3. Combine the ingredients for the dressing in a bowl. Add the vermicelli, cucumber sticks, thinly sliced onion and chopped herbs. Toss gently.
  4. Arrange the mixture on the lettuce leaves, add the chicken slices and sprinkle with chopped peanuts.
