Curried Chicken Bites in a Zucchini Ribbon Recipe

Ingredients
For 4 servings
- 1 chicken breast
- 1/2 tsp. curry powder
- 1 thin zucchini
- olive oil
- fine salt

Method
- Rub the chicken breast with the curry; season with salt and cook in a preheated low oven (120° C / 250° F) for 20 minutes. Cool.
- Slice the zucchini into thin lengthwise strips (you can use a mandolin) and steam for 6 minutes. Drain. Immerse in ice water to preserve the texture. Drain again and dry well on paper towel.
- Coat the zucchini slices with a little oil.
- Cut the chicken breast into cubes and roll each cube up in a slice of zucchini. Fasten with a pick.
