Chilled Nougat with Melon and Spiced Confit Fruit

Ingredients for 4 servings
- 4 egg whites
- 150 g (3/4 cup) sugar
- 30 g (2 tbsp.) honey
- 50 ml (3 tbsp.) aged rum
- 500 g (2 cups) heavy cream
- Pineapple, apple, banana, mango
  1. Reduce the rum and 20 ml (4 tsp.) honey by half. Add the diced melon. Cook for 5 minutes, coating it well with the syrup.
  2. In another saucepan, make the syrup: bring the remaining honey, 75 g (5 tbsp.) sugar and 4 tbsp. water to a simmer and cook for 4 minutes.
  3. Beat the egg whites to soft peaks with 1 tsp. sugar then, while still beating, gradually mix in the hot syrup. Continue beating until the meringue is stiff and shiny.
  4. Let cool, then graduallly fold in the melon and the whipped cream.
  5. Pour the mixture into a plastic wrap-lined mold and refrigerate.
  6. Peel all the fruit; cook it slowly with the remaining sugar and a pinch of four-spice powder (quatre-épices).
  7. Serve the nougat with the fruit.
