Chocolate Cake with Griottines (Sour Cherries) Recipe

Chef's Note
Griottines are small sour cherries preserved in alcohol: they're pitted and macerated in a light kirsch syrup. Delicious!

- 250 g (8 oz; 2 1/2 cups) flour
- 250 g (1 1/4 cup) sugar
- 120 g (4 oz.) butter
- 50 g (2 oz.) Cocoa
- 4 eggs
- 3 tbsp. hot water
- 1 packet of baking powder
- 50 g (1/4 cup) sugar
- Grated Chocolate
- 200 ml (3/4 cup) griottine (Cherry) juice, with kirsch added
- 100 to 150 griottines (small pitted sour cherries)
Method
- Whip the egg yolks with the hot water, gradually beating in the sugar until very fluffy.
- Beat whites to very stiff peaks; gently fold them into the mixture.
- Combine the flour, cocoa and baking powder and sprinkle into the egg mixture.
- Stir the batter until it is smooth. Add the melted butter and fold again.
- Grease a layer cake pan with butter, pour the batter into the pan.
- Bake for 45 minutes in a 180° C (350° F) oven.
Finishing
- When the cake is baked and cooled, cut it in half horizontally.
- Sprinkle the bottom layer with half the kirsch and griottine juice.
- Fill with griottines (setting some aside for decoration) and sugar. Top with the remaining layer of cake, and sprinkle with the remaining kirsch and griottine juice.
- Frost with whipped cream that has been lightly sweetened and flavoured with vanilla, and decorate with powdered chocolate and griottines.
