Vaniljekranse - Danish vanilla cookies Recipe

In Danish, this cookie is called Vaniljekranse, meaning "vanilla wreath."
Hints & Tips
If you choose to make smaller wreaths, the cookies will be crisper.
(1) You can use a food processor or a blender to grind the almonds into almond flour.
Ingredients
For 75 to 100 cookies
- 1 vanilla bean
- 175 g sugar
- 200 g soft salted butter
- 1 egg
- 75 to 100 g almond powder or almonds (1)
- 250 g all-purpose flour
Method
- Split the vanilla bean and scrape out the vanilla seeds.
- Mix the sugar, vanilla seeds and butter together in a bowl.
- Add the egg, flour and almond flour and combine to form a soft dough.
- Preheat the oven to 200°C / 400°F.
- Transfer the dough to a piping bag fitted with a star tip.
- Pipe out the dough into small circles of a diameter about 4-5 cm / 1-1/2-2".
- Place the vanilla cookies on a baking tray lined with parchment paper, spacing them 4 cm / 1 1/2" apart.
- Bake for about 6 minutes or until pale golden.
- Let the cookies cool off before storing in an airtight tin.
