As served poolside at Madeira's Cliff Bay Resort
Ingredients for 1 cocktail
- 60 ml (2 oz.) passionfruit syrup
- 40 ml (1 1/2 oz.) gin
- 40 ml (1 1/2 oz.) melon juice*
- Lemonade
  1. Place the passion fruit syrup, gin and melon juice in a blender with a little ice;
  2. Pour into a highball glass; fill with lemonade; stir with a swizzle stick.

*You can make the melon juice with a juice extractor or by placing a seeded slice of melon in a blender and liquefying it before making the cocktail.
