Corn Muffins

A traditional recipe from the American south whose popularity has spread far afield.
Ingredients
Ingredients for 12 muffins
- 250 ml (1 cup) Cornmeal
- 185 ml (3/4 cup) all-purpose flour
- 1 tsp. baking powder
- A pinch of baking soda
- 1 tbsp. sugar
- A pinch of salt
- 1 beaten egg
- 3 tbsp. melted butter
- 250 ml (1 cup) buttermilk
Method
  1. combine all the dry ingredients;
  2. gently mix in the remaining ingredients;
  3. pour into individual muffin tins;
  4. bake in a preheated 200° C (400° F) for 15-20 minutes.
