Cornbread Recipe

Chef's Note
In the southern bread basket, you'll always find cornbread, often presented in the form of small muffins. Traditionally they were baked in corncob-shaped moulds and served with boiled turnip greens whose cooking liquid was used to moisten the cornbread.
Ingredients
For 6 servings
- 1-1/2 c. (375 ml) cornmeal
- 1/2 c. (125 ml) all-purpose flour
- 1 tbsp. baking powder
- A pinch of salt
- 3/4 cup (185 ml) melted butter
- 1-1/2 cups (375 ml) milk
- 2 eggs, lightly beaten
Method
- Butter the muffin tins;
- combine all the dry ingredients in a large bowl;
- add the milk, egg and melted butter; add to the dry ingredients and mix just until blended;
- add a little more milk if necessary;
- pour into the muffin tins; bake for about 20 minutes until golden.
