Corsican Brousse with Lavender Honey and Mirabelles with Lime Blossom Recipe

Ingredients
For 4 servings
- 500 g (18 oz.) pitted Mirabelle or Yellow Plums
- 2 Lime blossom tea bags
- A few pieces of brown cane sugar
- 2 tbsp. toasted pine nuts
- 3 tbsp. lavender honey
- 4 small dishes of Brousse
Method
- Poach the mirabelles over low heat for 15 minutes in a sweet lime blossom infusion;
- Macerate in the syrup for 1 hour. Fill 4 small dishes two-thirds full of brousse cheese. Pour some warm honey over the brousse and add the toasted pine nuts.
- Drain the mirabelles and lay them on top of the cheese.
