Cream of Peanut Soup Recipe

Ingredients
Ingredients for 4 servings
- 250 ml (1 cup) peanut butter
- 1 onion, finely chopped
- 1 stalk of celery, finely chopped
- 65 ml (1/4 cup) butter
- 1 big spoonful of flour
- 1 liter (4 cups) chicken stock
- Salt and pepper
- 80 ml (1/3 cup) finely chopped unsalted Peanuts
- 250 ml (1 cup) heavy cream (35%)
Method
- Sauté the celery and onion in the butter until tender but not browned;
- make a roux by stirring the flour into the butter in the pan; remove from the heat;
- add the peanut butter; mix well; gradually stir in the stock; season with salt and pepper;
- bring everything to a boil; reduce the heat and simmer for 20 minutes;
- stir in the cream and heat through;
- serve hot, sprinkling each bowl of soup with chopped peanuts.
