Pork and Coconut Curry with Vegetables

For 4 servings

- 300 g (10 oz.) pork tenderloin
- 200 ml (3/4 cup) coconut milk
- 2 shallots
- 1 bunch of broccoli
- 2 tbsp. curry powder
- a handful of raisins
  1. Cut the pork into 8 mm (1/3") cubes.
  2. Cut the broccoli into small florets.
  3. Thinly slice the shallots.
  4. Blanch the broccoli in boiling water for 2 minutes.
  5. Sauté the shallots in a skillet in a little oil; add the pork and drained broccoli. Cook 2 minutes.
  6. Add the coconut milk, curry, salt, pepper and raisins. Cook, covered, 10 minutes longer over low heat, stirring occasionally. Serve.
