Eggplant Fritters

Chef's Note

These fritters can be served as a first course or as a side with a meat dish.

For 20 fritters

- 1 large eggplant
- Oil for frying

- 250 g (8 oz.) flour
- 500 ml (2 cups) water
- A pinch of ground anise and turmeric
- Salt and pepper
  1. Prepare the batter by combining all the ingredients. 
  2. Cut the eggplants into rounds.
  3. Drop each round into the batter to coat it well, then fry in hot oil. Turn so that each side is golden brown. Drain and transfer to paper towel.

You can cook several fritters at once, but it's best if they don't touch.
