Chef's Note
As served poolside at the Estoril Sol Hotel in Portugal.
Ingredients for 1 cocktail
- 20 ml (4 tsp.) vodka
- 20 ml (4 tsp.) Cointreau
- 20 ml (4 tsp.) blue curaçao
- 20 ml (4 tsp.) cream
  1. pour the ingredients into an ice-filled cocktail shaker; shake; strain into a tall cocktail glass;
  2. garnish with a twist of lemon, a cherry and a mint leaf. 

Another version

  1. for 1 cocktail
    • 30 ml (1 oz.) rum
    • 20 ml (4 tsp.) Pissang Ambon
    • 10 ml (2 tsp.) blue curaçao 
    • 1 tbsp. cream
    • 7-up
  2. put the first 4 ingredients into a glass with ice cubes; top up with 7-up;
  3. garnish with a lemon and orange twist, a cherry and a mint leaf.
