Double Binchoise pancakes Recipe

Ingredients
For 6 servings or 12 pancakes
- 500 g buckwheat flour
- 500 g white flour
- 1 bootle (750 ml) of light beer - a Binchoise.
- 1 litre / 4 cups warm water
- 1 Tbsp. salt
- 5 turns of pepper mill
- 100 g yeast
- 1 Tbsp. peanut or vegetable oil
- Herve or boulette cheese
- butter or lard
Method
- Mix buckwheat flour, all purpose flour, beer, water, salt and Pepper in a bowl.
- Add yeast diluted in oïl and warm water.
- Let the batter rest for 30 minutes.
- Make the pancakes in a frying pan coated with melted butter or lard.
- Spread a pancake with the cheese, then make a sandwich with another pancake on top and warm these double pancakes in the pan until the cheese melts.
- Serve the double pancake on a plate with a knob of butter on top. Season with salt (sparingly) and Pepper.
