Chef's Note
Fougassette is a slightly sweet bread flavored with orange flower water.
Ingredients
- 250 + 250 g (9 + 9 oz.) flour
- 150 g (5 oz.) sugar
- 1 + 1/2 glasses warm water
- Dry yeast
- 100 - 150 ml (6-9 tbsp.) olive oil
- 2 eggs
- 1 tbsp. orange Orange flower
- Zest of 1 lemon
- A pinch of salt
Method
- Sift 250 g (9 oz.) flour and combine with half a glass of warm water and the yeast; knead until smooth; form into a ball and let rise for 2-3 hours in a warm place until doubled in volume;
- sift 250 g (9 oz.) flour and add a pinch of salt; form a well in the center; in the well place 2 eggs, the orange flower water, sugar, orange zest, glass of water and oil; knead to a smooth dough;
- combine the two doughs until smooth; let rise 3 hours;
- divide the dough into balls about the size of an orange; flatten into ovals about 2-3 cm (1") thick;
- slash the surface deeply; bake in a 180° C (350° F) oven for about 15 minutes or until cooked and golden.
