Fresh Tagliatelle

- 400 g (14 oz.) white flour
- 4 Eggs
- 2 tbsp. oil
- see Pasta
  1. Place the flour on a work surface; make a well in the centre and pour in the oil and the eggs;
  2. mix all the ingredients with a spatula or with your hands; if the dough is too stiff, add a few drops of water;
  3. if you have a pasta machine, put the dough through the roller 4 or 5 times to obtain a thin length of pasta; otherwise, flour your work surface and roll the dough out as thinly as possible;
  4. let rest one hour;
  5. roll the pasta up lengthwise; using a very sharp knife, cut the pasta into slices not more than 2 mm wide;
  6. put the tagliatelle into boiling water to which a spoonful of salt has been added; cook for 5-6 minutes;
  7. remove and season to taste with oil and spices or sauce.
