Fried Cheese-Filled Ravioli with Honey Recipe

Did you know that ravioli could be served for dessert? Here's a sebadas recipe from Sardinia that begin in the Nuoro region and went on to win over the whole island.

- 2 3/4 cups flour
- 12 oz. fresh cheese (fromage frais)
- 3 tsp. oil
- Oil for frying
- Honey

Method
- place the cheese in a small saucepan with a few drops of water; melt over low heat, stirring with a wooden spoon;
- with wet hands, form the cheese into small balls; flatten them slightly and place on a kitchen towel; let rest 2 hours;
- prepare the dough; combine the flour and oil, adding a little salted water; work until the dough is smooth and elastic;
- roll out the dough; cut out small discs about 10 cm (4") in diameter using a cookie cutter or a glass;
- place one small ball of cheese in the center of each disc; top with another pasta disc and seal the edges together;
- fry in hot oil, turning occasionally; remove when nicely golden brown;
- dip each sebada in hot honey and serve immediately.
