Fried Rice with Shrimp (or Crab) and Pork - Bokum Bahb Recipe

Ingredients
For 4 servings
- 4 tbsp. peanut oil
- 2 onions, coarsely chopped
- 225 g (8 oz.) roast pork, shredded or cut into strips
- 225 g (8 oz.) shrimp or crab
- 500 (2 cups) cooked long-grain Rice
- 1/2 red pepper, cut into strips
- 1 tbsp. light soy sauce
- 2 tbsp. sesame oil
- 3-4 carrots, cut into thin sticks
Method
- Heat the oil in a wok; add the onions and stir-fry until translucent;
- Add the pork and chili and cook two minutes longer;
- Add the rice, stirring constantly with a wooden spatula;
- Add the shrimp at the last minute with the soy sauce and sesame oil; transfer to a hot serving platter; garnish with the carrot sticks or radish flowers.
