Glam's (foie gras, fig and argula canapés)

For 12 canapés

- 12 mini baguettes or toasted baguette slices
- 120 g (4 oz.) raw foie gras
- 36 g (2 Tbsp.) organic fig jam
- 6 fresh figs
- some arugula leaves
- fleur de sel and freshly ground pepper
  1. Cut off the ends of the mini baguettes on a sharp diagonal.
  2. Spread the two slices with fig jam.
  3. Top with 2 or 3 arugula leaves.
  4. Quickly pan sear a slice of foie gras cut in half (10 g/ 1/3 oz.).
  5. Season with salt and pepper.
  6. Serve two slices per plate.
