Greek-Style Mushrooms

Chef's Note

If possible, marinate the mushrooms overnight in the fridge before serving.

- 500 g (18 oz.) small white mushrooms
- 12 pearl onions
- 4 Tbsp. olive oil
- 4 Tbsp. white wine
- juice of 1 lemon
- 1 bouquet garni (parsley stalks, 1 sprig thyme, 1 bay leaf)
- 6 coriander seeds
- 6 white peppercorns
- salt

- 1 Tbsp. tomato concentrate (not traditional, but often added)
- a pinch of Espelette chili for fans of spicy food
  1. Clean and quarter the mushrooms.
  2. Sweat the whole or chopped pearl onions in olive oil in a skillet for 5-6 minutes.
  3. Add all the other ingredients. Cook gently for 10 minutes, stirring occasionally with a wooden spoon.
  4. Remove the bouquet garni. Transfer the mushrooms to a dish and let cool; refrigerate.
