Hearty Soup from Hendaye Recipe

Chef's Note
This hearty soup is served right in its cooking pot, traditionally terra cotta. It can be made with any kind of fresh vegetables depending on the season, but it should always include white beans.  
- 1 1/2 liters (6 cups) water
- 250 g (9 oz.) white beans
- Vegetables as desired
- A piece of salt pork (blade)
- Grated cheese
- Thick slices of bread
  1. peel and julienne all the vegetables; 
  2. place all the ingredients into a soup pot, except the bread and cheese; cook and allow to thicken naturally; 
  3. place the bread slices into a terra cotta tureen; pour the soup over top; add the diced meat; sprinkle with cheese and gratiné in the oven.
