Herb-Crusted Pacific Halibut with Chive Mashed Potatoes Recipe

Ingredients
For 2 servings
- 2 Halibut fillets
- 5 small new potatoes cooked in boiling water
- 20 g (2/3 oz.) chives
- 10 asparagus tips
- 4 shiitake mushrooms
- 10 pearl onions
- 1 large handful of fresh spinach (preferably young shoots)
- Butter or olive oil
Herb crust
- 80 g (3 oz.) bread crumbs
- 25 g (1 oz.) parsley
- 40 g (1 1/2 oz.) gruyere
- 100 g (3 1/2 oz.) softened butter
Method
Preparing the herb crust
- Purée all the ingredients for the herb crust;
- place between two sheets of plastic wrap and roll out with a rolling pin; refrigerate.
Cooking
- Cut out the herb crust to fit the fish fillets;
- place a crust on each fillet;
- cook in the oven for a few minutes;
- sauté the mushrooms, asparagus tips, onions and spinach in butter or olive oil.
Finishing and presentation
- Mash the potatoes with a fork, incorporating the chopped chives;
- place the potatoes in the center of the plate in a long ribbon;
- add the sautéed vegetables;
- finish with the fish fillet;
- foam the cooking juices from the fish with an electric whisk and pour over everything.
