Honey Lemon Bread

Chef's Note

Ideal with a cup of tea

- 310 ml (1 1/4 cups) all-purpose flour
- 1 tsp. baking powder
- 125 ml (1/2 cup) sugar
- A pinch of salt
- 2 beaten eggs
- 125 ml (1/2 cup) softened butter
- 125 ml (1/2 cup) milk
- Grated zest of 1 lemon

- Juice of 1 lemon
- 2 tbsp. citron
- 125 ml (1/2 cup) hot water
  1. Combine all the ingredients from the first part - begin with the eggs and sugar; add the milk; finish with the dry ingredients;
  2. pour into a buttered loaf pan;
  3. bake in a preheated 180° C (350° F) oven for 30-45 minutes depending on the shape and height of the pan;
  4. remove from the oven once the bread is nicely browned; insert a skewer into the center: if it comes out clean, the bread is done;
  5. dissolve the honey in the hot water; add the lemon juice;
  6. place the bread on a rack set over a pan; drizzle it with the glaze;
  7. slice the bread and serve on its own, with whipped cream or a cinnamon-flavored mango coulis.
