Honey Muffins with Dried Cranberries Recipe

- 625 ml (2 1/2 cups) whole wheat cereal
- 315 ml (1 1/4 cup) buttermilk or milk
- 125 ml (1/2 cup) clover Honey
- 80 ml (1/3 cup) vegetable oil
- 1/2 tbsp. grated orange zest
- 2 eggs
- 160 ml (2/3 cup) dried cranberries (Cranberry)
- 375 ml (1 1/2 cups) white flour
- 60 ml (1/4 cup) brown sugar
- 4 tsp. baking powder
- 1/4 tsp. salt
- 125 ml (1/2 cup) chopped pecans (optional)
Honey orange butter
- 125 ml (1/2 cup) softened butter
- 60 ml (1/4 cup) honey
- 1 tbsp. orange zest
Method
- Preheat the oven to 190°C. (375°F.); line the muffin tins with paper cups;
- in a large bowl, combine the cereal and milk; let soak for 5 minutes.
- Add the honey, oil, zest and eggs; mix well; add the cranberries.
- Combine the dry ingredients; stir them into the preceding mixture without overmixing.
- Add the pecans if desired and fill the muffin cups. Bake for 20-25 minutes or until the muffins are golden and baked (a toothpick inserted into the center will come out clean).
- Combine all the ingredients for the honey-orange butter and serve on the side.
