Kebabs (Lamb or Chicken) with Avocado Salsa

Chef's Note

If you are using wooden skewers, soak them in water for at least an hour to prevent them from burning when you put them on the grill.

For 4 servings

For the kebabs
- 225 g (8 oz.) ground lamb or chicken
- 50 g (2 oz.) breadcrumbs
- 1 clove of garlic
- 1 small onion, minced
- 1 tbsp. chopped fresh cilantro
- 1 beaten egg
- Salt and pepper

For the salsa
- Juice of half a lime
- 1/2 tsp. chili powder (or less to taste)
- 3 tomatoes, finely diced
- 1/2 tbsp. chopped fresh cilantro
- Salt and pepper
- 4 pitas
  1. Combine all the ingredients for the kebabs. Divide the mixture into 4 and form into sausage shapes around the 4 skewers.
  2. Grill or barbecue for 15 – 20 minutes, turning occasionally, until browned and cooked through.
  3. Meanwhile combine all the ingredients for the salsa. Season well.
  4. Heat the pitas and split lengthwise. Place a grilled kebab and some of the salsa in each one.
