Lamb Meatballs Stuffed with Grapes and Cumin Recipe

It's important to be especially careful when working with ground lamb. Use a utensil or wear disposable gloves if working by hand. When you bite into these meatballs, the grapes explode in your mouth in a burst of fresh flavor.
Ingredients
Ingredients for 4 servings
- 600 g (1 lb. 5 oz.) ground Lamb shoulder
- 2 eggs
- 60 ml (1/4 cup) bread crumbs
- 1 tbsp. ground Cumin
- A small bunch of fresh mint
- 6-8 small seedless green Grapes per person
- 250 ml (1 cup) couscous
- 1 tbsp. olive oil
- 1 tbsp. sultana Grapes or currants
- 1 tsp. salt and pepper
Method
- In a large bowl, combine the lamb, eggs, bread crumbs, cumin and finely chopped mint; season with salt and pepper;
- shape the mixture into small meatballs about the size of a cherry tomato; insert a grape into each meatball;
- oil the meatballs and grill them on all sides until well cooked;
- cook the couscous and add the currants or raisins. Serve on the side.
