Ingredients
Ingredients for 4 servings
- 1 basket of Mache (Lamb's Lettuce) (150 g / 5 oz.)
- 150 g (5 oz.) medium-hard mountain cheese or 4 small goat cheeses
- 2 white mushrooms
- 4 sprigs of flat leaf parsley, washed and stems removed
- 12 black Nyons olives, pitted
- 150 g (10 tbsp.) crème fraîche
- 3 whole eggs
- Walnut oil
- Lemon juice, salt, pepper and grated nutmeg
- Puff pastry
Method
- Line 8 individual tartlet molds with puff pastry.
- Preheat the oven to 190°C. (375°F. )
- In a bowl, whisk together the crème fraîche and eggs; season with salt, pepper and nutmeg.
- In each tartlet shell, place some flat leaf parsley, diced mountain cheeses and pitted coarsely chopped olives.
- Add the egg mixture and bake until nicely golden.
- Place some lamb's lettuce salad around each tartlet on a plate.
- Thinly slice the white mushrooms and add them to the lamb's lettuce salad.
- At the last minute, drizzle the salad with a walnut oil and lemon juice dressing.
