Little Nation Pudding - 19th century recipe

Ingredients
- 125 ml (1/2 cup) finely chopped beef suet
- 250 ml (1 cup) Maple Syrup
- 250 ml (1 cup) peeled, grated potatoes
- 375 ml (1 1/2 cup) grated raw carrots
- 250 ml (1 cup) raisins
- 250 ml (1 cup) all-purpose flour
- 1 tbsp. baking powder
- 60 ml (1/4 cup) candied peel
- A small pinch of salt, cinnamon and nutmeg
- 2 cloves
Method
  1. Combine all the ingredients; pour into a buttered dish; cover tightly with a lid or aluminum foil;
  2. cook in a water bath for 3 1/2 hours.
  3. Serve with a white sauce sweetened with maple syrup (proportion of 3:1).
