Mild Ceylon Curry

Ingredients
- 1 cinnamon stick
- 1 tbsp. ground cloves
- 1 tbsp. black pepper
- 6 g (1/5 oz.) cumin seed
- 3 green cardamom seeds
- 225 g (8 oz.) coriander seed
- 60 g (2 oz.) fennel seed
- 1 tbsp. fenugreek seed
- 8 curry leaves
- 50 g (2 oz.) toasted powdered rice

Optional
- Nuts
- Coconut
- Onion
- Garlic
Method
  1. Grind all the ingredients into a coarse powder;
  2. place in an airtight container and store in a cool place; the mixture will keep well for six months.
