Mint Jelly Recipe

- 1 large bunch of fresh Mint + 3 tbsp. chopped mint
- 2 kg (4 1/2 lb.) cooking apples
- White vinegar and water in equal proportions
- Brown and white sugar in equal proportions
Method
- quarter the apples and place in a large pot;
- cover with water and white vinegar; add the bunch of mint and simmer until the apples are cooked and tender;
- pour everything into a jelly bag or a fine strainer and let strain slowly overnight at room temperature;
- measure out the resulting liquid and add brown and white sugar: 1 1/2 cups of sugar for each 625 ml (2 1/2 cups) liquid; bring to a boil; remove from the heat immediately and let set for 10 minutes;
- add the chopped mint; pour into sterilized jars, seal and cover.
