Mole Enchiladas Recipe

Ingredients
For 8 servings
- 36 fresh Tortillas
- 1 liter (4 cups) mole sauce
- 3 Chicken breasts
- 500 ml (2 cups) cream
- 500 ml (2 cups) grated cheese
- 2 small onions
- 1 clove
Method
- Cook the chicken breasts with a quarter onion, the garlic, clove and a pinch of salt;
- heat the mole sauce; dip the tortillas into the sauce;
- fill each tortilla with slices of chicken; roll up;
- place 3-4 enchiladas on each plate; drizzle some sauce over top; garnish with onion rings, grated cheese and 2 tbsp. cream.
