Monarchy Luau Punch - Hawaii Recipe

Ingredients for 25 servings
- 1 fresh Pineapple
- 125 ml (1/2 cup) brandy
- 2 tbsp. sugar
- 750 ml (3 cups) pineapple juice
- 3.5 liters (14 cups) white wine
- 500 ml (2 cups) sparkling wine
  1. peel and core the pineapple; chop the flesh finely; 
  2. combine the pineapple, sugar and brandy in a container and marinate for 6 hours or overnight; 
  3. pour the pineapple juice into an ice cube tray and freeze; 
  4. refrigerate the white wine; 
  5. 30 minutes before serving, place the pineapple mixture in a large punch bowl; 
  6. pour on the white wine; 
  7. just before serving, add the sparkling wine and pineapple ice cubes.
