An original recipe from Marc deCanck, of La Chronique restaurant in Montréal to accompany his Suckling Pig in Various Forms
Ingredients
Ingredients for 4 servings
- 60 ml (1/4 cup) crushed green Olives
- 60 ml (1/4 cup) crushed black olives
- 2 eggs
- 30 ml (2 tbsp.) heavy cream (35%)
- 15 ml (1 tbsp.) olive oil
- 15 ml (1 tbsp.) white vermouth
- 125 ml (1/2 cup) flour
- 1 tsp. baking powder
- 100 g (3 1/2 oz.) diced smoked ham
- 60 ml (1/4 cup) grated gruyere
Method
- Combine the eggs, cream, oil and vermouth.
- Add the remaining ingredients and blend to form a batter.
- Pour into a buttered and floured rectangular cake pan. Bake in a 190° C (375° F) oven until golden and risen.
- Unmold and cool. Cut into 8 - 1 cm (3/8") slices, then into circles using a cookie cutter.
