Chef's Note

You can serve a whipped butter in a ramekin dish or you can roll the butter into cling film like a sausage. Refrigerate until firm.

You can add 1 Tbsp. honey
You can substitute 1 Tsp. Grand Marnier to orange juice.

Cold, orange butter is great with muffin, brioche…
Warm, it goes well with seafood like lobster and scallops, carrots, pancakes…

- 250 g / 1 cup butter
- 15 ml / 1 Tbsp. orange juice
- 15 ml / 1 Tbsp. orangezest
  1. Soften the butter by leaving it out of the fridge and bringing it to room temperature.
  2. Lightly cream the softened butter with a fork or beat it with an electric beater.
  3. Add the orange juice and zest. Mix until well combined.
  4. Let mixture stand for an hour to allow the orange flavours to infuse into the butter.
