Lunch Box Idea
Use these orange muffins instead of sandwich bread. Halve them and fill with Gruyère or Swiss cheese. Add an apple, some grapes and a carton of milk for a well-balanced meal. 

- 315 ml (1 1/4 cups) all-purpose white flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 60 ml (1/4 cup) softened butter
- 125 ml (1/2 cup) honey
- 1 egg
- 60 ml (1/4 cup) orange juice concentrate
- 1/2 tsp. grated orange zest

Orange Honey Butter
- 125 ml (1/2 cup) softened butter
- 60 ml (1/4 cup) honey
- 1 tbsp. grated orange zest
  1. Combine all the dry ingredients in a bowl. 
  2. Cream the butter and honey with a whisk or electric mixer. 
  3. Gradually whisk in the egg, orange juice and zest; mix in the dry ingredients little by little. 
  4. Spoon into greased or paper-lined muffin tins; bake in a 180° C (350° F) oven for 25-30 minutes. Check for doneness with a skewer or the tip of a knife. 

Honey and Orange Butter
Combine all the ingredients and serve on the side.
