Palmiers or Elephant Ears
Total time: 15 to 30 minutes

Preparation time: 10 minutes
Baking time: 20 minutes

Difficulty: Easy
For 6 servings

- 2 rolls of prepared puff pastry (rectangular if possible)
- 130 g (5 oz.) sugar
- 2 packets of vanilla sugar
  1. Preheat the oven to 180° C (350° F).
  2. Combine the sugar and vanilla sugar.
  3. Unroll the puff pastry. Sprinkle on some of the sugar mixture. Roll the two sides of the pastry in toward the center until the two rolls meet in the middle.
  4. Refrigerate for 30 minutes, then slice and lay the slices on a parchment or silicone-lined baking sheet. Sprinkle each palmier with some of the remaining sugar.
  5. Bake for about 20 minutes or until nicely browned.
  6. Cool to room temperature.
