- 240 g (8 oz.) Chickpea flour
- 200 ml (3/4 cup) olive oil
- 1 liter (4 cups) water
Method

Version 1

  1. Combine all the ingredients to form a thick elastic batter; 
  2. place into a square plastic container and refrigerate for 2 hours; 
  3. unmold the mixture; cut into large fries; 
  4. fry as you would French fries; season with salt and pepper and serve immediately. 

Version 2

  1. Combine all the ingredients to form a thick elastic batter; 
  2. Cook for about 15 minutes; 
  3. place the batter between two sheets of parchment paper and roll out with a rolling pin; chill for about 2 hours; 
  4. cut into large fries;
  5. fry as you would French fries; season with salt and pepper and serve immediately.
