Peanut Soup Recipe

Ingredients for 2-4 servings
- 100 g (3 1/2 oz.) Peanuts
- 200 g (7 oz.) Chicken breast
- 100 g (3 1/2 oz.) butter
- 1 big spoonful of flour
- 1 liter (4 cups) chicken stock
- 100 g (6 tbsp.) heavy cream (35%)
  1. In a large saucepan, make a roux with the flour and butter; add the chicken broth and bring to a boil;
  2. mash the chicken breast with the cream; put through a sieve with the chicken broth;
  3. toast the skinned peanuts; crush them and add to the soup; return to low heat until the soup thickens slightly;
  4. season generously; spice to taste and serve hot.
