Individual Pear and Bleu d'Auvergne (Blue cheese) Tarts

For 4 servings

- 200 g (7 oz.) Bleu d'Auvergne
- 4 puff pastry circles, 12 cm / 5" in diameter
- 4 ripe Pears
  1. Bake the puff pastry circles for 10-12 minutes, sandwiched between 2 baking sheets so that they remain flat;
  2. thinly shave the Bleu d'Auvergne and evenly arrange the shavings over the pastry discs; slice the pears thinly and arrange the slices in a rosette on each disc;
  3. place in a hot oven (200° C/400° F) for 2-3 minutes;
  4. serve with a salad of frisée lettuce and small pieces of bacon as a first course, or on their own as a cheese course.
