Pisco Sour - Peru Recipe

- 3 measures Pisco
- 1 1/2 measures lime juice
- 1-2 tbsp. cane syrup
- or sugar to taste
- 1 egg white
- Ice
Method
- Pour all the ingredients into a cocktail shaker with ice;
- shake well to chill until the egg white is foamy;
- strain into glasses and serve.
- For garnish, add a touch of cinnamon or a dash of angostura bitters.
Note: to be authentic, this refreshing, delicious aperitif must have a little foam cap - many bars leave it out.
