Pumpkin Fritters

Chef's Note
For a pleasant change, try these crispy and subtly-flavored fritters.
- 500 g (18 oz.) cubed Pumpkin flesh
- 2 tbsp. sugar
- 2 tbsp. softened butter
- 2 eggs, lightly beaten
- 125 ml (1/2 cup) flour
- Oil for frying
  1. Place the cubed pumpkin in a pot; cover with water and boil for about 30 minutes, or until the pumpkin is cooked and tender;
  2. drain; purée the pumpkin with the sugar, butter and eggs; add the flour as you continue to mix;
  3. heat the oil in a high-sided pan; place spoonfuls of the batter into the oil and cook about 5 minutes until nicely browned; remove, drain and serve hot or warm.
